Hard cheese, semi hard or soft semi, slightly yellowish paste, with a few small eyes, obtained by slow draining of the curd after coagulation of raw sheep milk on its own, on a thistle infusion (Cynara cardunculus) and from the Region demarcated, some parishes of the municipalities of Idanha-a-Nova, Castelo Branco and Fundão. Crust color straw yellow to dark yellow uniform, soft, full, well formed and smooth.
