Hard cheese, semi hard cheese or semi soft, slightly yellowish, with some irregular holes, obtained by draining of the curd after coagulation of raw sheep’s milk on its own, or a mixture of sheep and goat per share of animal rennet and from the demarcated region. Crust color straw yellow to dark yellow uniform, semi-hard consistency, well-formed, thin and whole.
