Shiitake (Lentinula edodes) is an edible mushroom native to East Asia. With a characteristic flavor and much used in Chinese and Japanese cuisine, shitake can be consumed in several ways: Risotos, salads, pizzas, various types of sauces, grilled, stroganoff. It is a protein rich food, having 10% to 29% of its dry weight; essential amino acids; contains vitamins E, B, C and D; and the mineral salts calcium, phosphorus, iron, potassium. In addition to containing dietary fibers that aid in digestion, it contains low levels of sugar and fats, is therefore the ideal recipe for diets for being very yummy, and contain low calories.
